I’ll Be Trying this Tonight - Cucumber Salad
From the food blog “Pinch My Salt”, a very simple recipe for sweet and spicy cucumber salad. Here is the link. I will alter the recipe slightly. Instead of crushed red pepper, I will grind a bit of pepper into the marinade and use a combination of finely diced fresh red pepper (a bit sweet) and a dash of Linghams ginger, chille, garlic sauce (sweet and hot). Adding these sweet things, I also will cut back slightly on the amount of sugar. Let’s hope they have fresh dill at Selver!
And of course, I will give my completely unbiased assessment tomorrow.

2d FOLLOW - Here is my promised recap. I was rather lazy about the red pepper and did not dice it as finely as I thought I would. After chopping two peppers into small bits, I decided that was enough. But along with the cucumber, this created quite a bigger salad than I expected. So I added to the marinade considerably. Then as I was sauteing some pork pieces, I thought, why not create a melange? After browning the pork, I turned the heat down to low, poured over a generous amount of the salad, covered the pan and let it simmer for around 15 - 20 minutes. That was very low heat. The result? Mama mia! This was good. Oh. And the salad was nice too.
